The Distillato d'Uva di Prosecco is obtained distilling grape skin, pulp and juice in a single process. The fermentation of grapes is carried out purely, and thanks to a long maceration, most of the aromatic components contained in the grape berries can be extracted. A discontinuous steam distillation is carried out immediately afterwards, to obtain a delicate scented spirit rich in floral aromas. The particular distillation system in vacuum steam stills allows maintaining a high concentration of perfumes and a great quantity of aromatic substances. In order to maintain the desired freshness, fine quality and fruity aroma, during this phase, the maximum temperature reached is about 65-70° (lower than the normal temperature required for the distillation of other spirits such as Grappa). |
